How to Make My Favorite Chicken and Broccoli Casserole with Freshly Milled Flour

This recipe was one of our family favorites that I just resurrected from the trash pile. I finally figured out how to bring it back in a much healthier form. Click on the link to view how to make this casserole.

How to Make My Favorite Chicken and Broccoli Casserole with Freshly Milled Flour

 

Here’s the recipe:

Recipe for casserole:

Chicken Broccoli Casserole with Bisquick Topping

2 pkgs (10-ounce each) broccoli florets frozen

2 cups chicken breast tenders baked and chopped

2 cans of Pacific Organic Cream of Chicken Soup

½ cup of organic milk or coconut milk

2 cups hormone-free cheddar cheese shredded

2 cups Homemade Bisquick recipe (see below**)

½ cup butter

Place broccoli in ungreased 2-quart casserole. Ten place chopped chicken on top. Mix cream of chicken soup and milk until smooth and pour over broccoli and chicken. Sprinkle two cups of shredded cheese over mixture. Put Bisquick mixture with frozen butter cut into chunks in food processor and process until smooth. Sprinkle this topping over cheese. Bake at 400 degrees for 50 minutes and broil to brown the topping for about five minutes.

 

**Homemade Bisquick recipe with freshly milled flour:

2 cups of soft white wheat milled flour

3 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons frozen butter

Mill two cups of soft white wheat flour. Put flour and other ingredients into Cuisinart or food processor and process until even. These casseroles can be frozen, but if doing that, don’t bake until the day you plan to serve.
